Relax.

I had planned on posting a few pictures... Christmas-tree shopping, mulled cider mulling...

I planned to do this last Sunday for Monday's post. 

Didn't happen. 

But decorating did happen- prior to '10:00pm'! (we intend to start everything early, but we tend to run behind)... drama-free! {SUCCESS!!}

Planned again to do it last night. A few more pictures to add to the mix... light-hanging, letter-writing (yep... those santa letters still happen!)...

Didn't happen.

But shopping did happen... and not only did it happen- it doesn't have to happen any longer, cause it's DONE. Hours and hours and days and HOURS later, but it. is. done. And wrapping did happen... prior to the usual hell that is us buried in unwrapped presents at the very, very last minute (Christmas eve)... cursing our way through... all the while trying to make them look festive... unique... creative... cute...

And this movie happened too. 

And arguments were forgotten...  undone tasks forgiven...

Coveting {part one}.


last night~ in the midst of rough drafts & dirty dishes, we managed to squeeze in all three. 

wednesdays call for a little 'special treatment', in my opinion.

 do not (i repeat:  do not) let this simple, understated image fool you. this meal is just pure [spring] perfection. 
{we substituted with gluten-free brown rice bread, and goat cheese. oh my.....}

 we saw this in bon appetit {april} on friday, and decided to to put it to the test.
it passed with high marks. but in remainder of the weekend, it grew even further on us. almost too pretty to drink. almost.

love, love, L O V E this show. every single character. we needed more comedy in our life, especially on a wednesday.
 

Time to PLAY.


Ryan has to work in Santa Barbara on Saturday, so yesterday we decided to 'sieze the moment'...  Hotel booked.  Kids thrilled.

Not a clue what we'll be doing... where we'll be eating.  But I will- without a doubt, be partaking in a little game of Nicolas Cage Roulette.

I may not know which teams are playing, but I do know we'll have a full house, full hearts, and a very full table.
  
...No baked beans this year {even though they were amazing~ i'd highly recommend}. This year is all about the wings, or drumsticks, rather.  I've yet to try either recipe- but how could you go wrong with a "spicy, sweet, salty" Sriracha glaze- or an authentic "warm up your belly" Jamaican jerk chicken (from one of my new[-to-me] favorite food blogs)?...diligently testing this recipe and this one tonight, cause the super bowl [menu] is serious business.  And I'd hate to put out anything but a winning dish.
  
...But really, sriracha, fresh ginger, brown sugar...

Spooked.



This weekend was all about gettin' into the spirit... the Halloween spirit.  

In our home- 'til the month of October has passed- we hold off on the pretty autumn leaf garlands, the harvest basket of pumpkins n' gourds, the festive seasonal wreaths, the colorful ears of Indian corn.  

The "fall bin" & the "Halloween bin" used to be one and the same.  But it never felt quite right hanging a hooded & gauzed grim reaper- amidst a black-feather-covered chandelier- above a table filled with pretty leaf-shaped candle holders & all sorts of other 'autumnal bliss.'  Somehow comfy-cozy-bounty-warm just doesn't mix with creepy-crawly-spooky-tacky...

So this month's reserved for cobwebs & skeletons... ghosts & ghouls... black & silver... purple & orange.  The traditional beef stew & crusty bread were savored... candles were lit... The Munsters & Scooby-Doo were watched... cider & wine were poured... My mom joined in on the fun, and as of today, the first of October~ our house has officially been spooked.

 



 


Now onto the really spooky part... figuring out the Halloween costumes.

What summer's made of.



I took an unexpected hiatus (not that I'd call 4 days a true hiatus) from this lil' blog of mine... all for a good cause.  The transition from school to summer is {surprisingly - even though it happens every year, it still comes as a surprise... each & every last day of school/first day of 'freedom'} a bit rocky.  The first few days are usually filled with grumpiness, tension, fighting, chaos... any or all of the above.  So I decided a short break was in order to get into the full 'summer groove'.  Evening chalk-art sessions, ice cream breaks, sign-making (these "summer-alert" signs have been posted on each & every bedroom door, nightstand- & more... in case we *forgot :)), tomato-pickin, and all sorts of garden-tending for that matter.  Of course, there's the usual chores, and a million 'non-summery' things in between the moments of bliss... car servicing, purging (aaaaalmost done. still), cleaning, hair-cuts... 

But all of this stuff isn't so bad when when speckled with library visits n' reading club check-ins, flashback movie viewings (so far, thanks to jacob's library rental choices- planet of the apes & clash of the titans... next up- flash gordon), late night pandora sessions, open windows at all hours of the day, new books to crack open- and old ones to finish, & possibly best of all~

peach pie popsicles
*slightly adapted from i eat grass.

6 servings

1 cup almond milk (I used unsweetened vanilla)
1 frozen banana, peeled chopped
2 large peaches, seeded diced (I had white peaches, so I used both peaches & nectarines, for added color)
½ tsp vanilla (my helper accidentally poured in 1 tsp... & they were not too vanilla-y at all)
1 tbsp agave
pinch of cinnamon


Combine all ingredients in a blender and blend until smooth or desired consistency. 

Pour into popsicle tray and freeze until set (3-6 hours).  If you don't have popsicle molds, just use a small paper cup & a popsicle stick.  Insert sticks into center of popsicles after they start to freeze.  When fully frozen & ready to enjoy, peel away the cup.
  
 
... and the best part~ a late-night 'slice of pie' on a stick.

Green velvet cupcakes... & a list.

                     
                      
Monday night, after Jacob came home from a boy scout meeting, he walked over with a smirk (you know, the kind that older brothers get when they have "dirt" to spill regarding their younger siblings) on his face, and handed me a paper that he'd found laying on the art table.
                      
It was a list created earlier that afternoon by my little list-making daughter.  Here is what it said (written in all cursive btw... as you can see above, she likes to write in cursive)...

  1. see if Mommy's on the computer
  2. if not, ask for Club Penguin [an online computer game that "ALL the girls" are playing]
  3. if is, ask for Wii
  4. or for T.V.
You see, she didn't actually do anything wrong per se.  But Jacob knows how we feel about being "plugged in" 24/7.  How we don't feel that it's necessary to take 5 minutes to grab the D.S. (and all of its accompaniments) in order to ensure *entertainment* on a 2-minute car ride.  How we don't always welcome the 10 calls a day by 8 year old girls phoning to request that Hailey stop everything she's doing- not so that they can have an actual CONVERSATION mind you- so that she can "log in" to the world of penguins & puffle pets.
                       
And he's heard us openly discuss when we've realized that the pendulum has swung a little too far in the wrong direction... a few too many meals eaten around the television rather than around the table... far too many nights of me frantically catching up on my computer (blogs, twitter, pinterest, facebook, e-mail- although that last one always seems to be deemed the lowest on the priority list)- or spending far too long composing that "perfect" post... and way too many undiscerning "yes's" in response to the "can we watch..." or "can we play [insert gaming system of choice]..."  {cause sometimes if I have a mound of dishes to do, or heaven-forbid- a long list of unchecked tweets- it is just easier to say YES}
                            
Well, looks like it's time for a little pendulum shift.  The one in which we remind our kids {& ourselves} of just how much there is to DO & enjoy that does not involve a plug.
                                                             
So, yesterday- after Hailey came home from school, I did- as usual- have a mound of dishes to do.  But this time, I asked her to stay and keep me company.  We chatted it up... and by the time we were finished, I couldn't get her to stop talking :).  A welcome change from the lethargic, short-spoken girl- who has gradually stopped asking me to play a board game with her... stopped asking if she can help me cook... stopped asking me what we're going to do together when Jacob leaves for his meeting.
                                            
We talked... we laughed... we formed a new list (of the grocery variety), we headed to the store, and after that, we baked.

DISCLAIMER:  These are dangerously delicious.  I only had a bite of one, and I'm scrambling to give at least 1/2 of them away before temptation prevails.
                        
green velvet cupcakes
*adapted from organic and chic 
               
makes 24 cupcakes (or 25, in our case)
                  
3 cups all-purpose flour
1/2 tsp salt
1 1/2 tbsp unsweetened cocoa powder
2 tsp vinegar
2 tsp baking soda
2 sticks unsalted butter, softened
2 cups sugar
3 large eggs
1 1/2 cups buttermilk
1 1/2 tbsp vanilla extract
2 tbsp professional green food coloring (I used 1 tbsp of Wilton leaf green icing, & 1 of AmeriColor forest green gel paste... left over from here and here.)
vanilla whipped buttercream (recipe below)
                     
Preheat the oven to 350.  Place liners in 2 muffin pans for 24 cupcakes.  Set aside.
            
In a small bowl, mix the cocoa powder, vinegar, and baking soda together.  Set aside.
             
Beat the butter and sugar on medium speed until light and fluffy, 3-4 minutes.
              
Add the eggs, one at a time, and continue mixing until well blended.  Mix in the buttermilk, vanilla, and food coloring.  Then add the cocoa powder mixture.
               
With the mixer on low speed, gradually add the dry ingredients to the buttermilk mixture.
               
Pour the batter into the prepared pans.
                    
Bake for 14-16 minutes, checking with a toothpick.
            
Let cool completely in pan for 10 minutes.  Then set on a wire rack and let cool completely.
                    
Frost with the vanilla whipped buttercream...

makes 3 1/2 cups frosting, enough to frost and fill one 8-inch layer cake or to frost 24 cupcakes
             
2 sticks unsalted butter, softened
1 cup sugar
1 cup whole milk
1/4 cup sifted all-purpose flour
1 1/2 tbsp vanilla extract
                 
Cream the butter on medium speed, 3 to 5 minutes, in a standing mixer or with a hand mixer until soft, about 30 seconds.  Add the sugar and beat on high speed until light and fluffy, 5-7 minutes.
                       
In a small saucepan, combine 1/4 cup of the milk, the flour, and the vanilla extract, and whisk until there are no lumps.  Over medium heat, slowly add the remaining 3/4 cup milk, whisking constantly, and heat until the mixture comes to a low boil.  Then reduce the heat to low and keep whisking for a few more minutes, until the mixture starts to thicken.
                  
Immediately remove the pan from the heat, but keep stirring.  (After you have removed the pan from the heat, the mixture will continue to cook for a minute or two on its own.  If you overheat it and get small lumps, try to whisk vigorously to get them out, or pass the mixture through a fine-mesh sieve.)  If necessary, place the pan over a bowl of ice water to stop the cooking process and allow the mixture to cool.
                
Once the milk mixture has thickened, set it aside to cool to room temperature.  You can stick it in the freezer to rush the cooling.
                  
With the mixer on low speed, slowly pour the milk mixture into the butter-sugar mixture.  Increase the speed to medium and beat until the frosting is light and fluffy, 3 to 5 minutes.
                       
                          
...and enjoy each & every luscious bite.
                            

A royal homecoming.


Well, it sure was a good weekend with that little girl of mine.  Hair cuts... nail painting... an all-day-marathon shopping trip... a beautiful film... chips n' salsa... an entire season of Tori & Dean (yes.  judge as you may... just started watching this year- season 6- & admittedly, kinda love it.  so of course i had to rent the first couple of seasons)... but best of all, lots of girl talk & giggles {& no bedtimes!}.  In short:  MISSION ACCOMPLISHED.
 
After 3 days of driving, snowshoeing, & driving some more, the boys made it home safe & sound {from a quick Yosemite trip}- just in time to unpack, settle in, & enjoy the season finale of Downton Abbey [tears], and a beloved British comfort dish (cause themes are important when it comes to t.v.)...
                                                         

english *cottage pie with root vegetables
from sizzling skillets and other one-pot wonders, by emeril lagasse

{same as last week- a delicious meal made in one pot- from a genius cookbook- compartmentalized according to our essential go-to one-pot vessels (skillets & saute pans, casseroles & baking dishes, dutch ovens, big pots, woks, even slow cookers)... love a chef that acknowledges- rather than snubs- the slow-cooker.}

8-10 servings

[LOTS OF INGREDIENTS, BUT THE ENTIRE DISH CAN BE MADE AHEAD & BAKED WHEN READY.}
  
5 tbs unsalted butter, plus more for greasing the pan (I used less, & added a little olive oil to the potatoes)
2 tbs vegetable oil
2 lbs lean ground beef
1 1/2 tsp salt, plus more for cooking the potatoes
3/4 tsp black pepper
1 1/2 cups diced onion
1/4 cup (about 12 cloves) minced garlic
1 1/2 cups diced turnip
1 1/2 cups diced parsnip
1 cup diced carrot
2 tbs tomato paste
3 tbs all-purpose flour
2 tbs dried rosemary
1 tbs dried thyme
1 tbs dried parsley
1 bay leaf
1 tbs plus 1 tsp dry mustard
1 3/4 cups beef stock or canned low-sodium beef broth
1 tbs worcestershire sauce
3 lbs idaho potatoes, peeled & quartered
1/4 cup plus 2 tbs half & half (I use 1% milk)
1/4 tsp white pepper
1/8 tsp freshly grated nutmeg
1 cup shredded sharp yellow cheddar cheese (about 4 oz)

Grease a 3-qt baking dish with a small amount of butter and set aside.

Heat a tbs of the butter and 1 tbs of the remaining butter and the remaining tbs of the oil in a deep 5-qt saute pan over medium-high heat.  When hot, add the ground beef, 1/2 tsp of the salt, and 1/4 tsp of the black pepper.  Cook the meat until browned, breaking it into pieces with a wooden spoon, 1- to 12 minutes.  Transfer the beef to a plate and set aside.

Return the pan to the heat and add 1 tbs of the remaining butter and the remaining tbs of oil.  Add the onion and cook, stirring, until soft and lightly caramelized, about 5 minutes.  Add the garlic and cook, stirring, for 30 seconds.  Add the turnip, parsnip, carrot, and 1/4 tsp of the remaining salt and cook until the vegetables are slightly tender, about 4 minutes.  Return the beef to the pan and add the tomato paste.  Cook, stirring for another minute.  Add the flour and leaf, mustard, stock, and worcestershire and stir to combine.  Bring to a simmer and cook until the sauce is slightly thickened, about 1 minute.  Reduce the heat so that the sauce barely simmers, cover, and continue to cook, stirring once midway, for 20 minutes.  Remove from the heat, remove the bay leaf, and season with 1/2 tsp of the remaining salt and the remaining 1/2 tsp black pepper.  Cover and set aside.
 
Position a rack in the upper third of the oven and preheat the oven to 400.
 
Place the potatoes in the saucepan and add enough cold water to cover by at least 1 inch.  Bring the water to a gentle boil, season with salt, and cook until the potatoes are fork-tender, 12 to 15 minutes.  Immediately drain the potatoes.  Pass the potatoes through a ricer into the same pot (or mash until smooth using a potato masher) and return the pot to the stove over low heat.  Add the remaining 1/4 tsp salt and 3 tbs of butter, the half-and-half, white pepper, nutmeg, and 1/2 cup of the cheese.  Stir to mix well and cook until heated through.
 
Transfer the meat mixture to the prepared baking dish.  Spoon the mashed potatoes over the meat mixture and, using the back of the spoon, smooth the top of the potatoes.  Sprinkle the remaining 1/2 cup cheese over the mashed potatoes.  Place the baking dish on a baking sheet and bake until browned and bubbly on top, about 25 minutes.  Remove from the oven and serve.
  
*  A shepherd's pie is made with ground lamb, hence the name, "cottage pie".

 
Definitely a lot of chopping, browning, stirring... but oh so worth it.
          

One day at a time.



we needed a weekend with absolutely no plans... no big adventures... no home improvement projects or complicated meals.  just lego mind-storming {jacob}, a difficult research paper {ryan}, downton abbey season 2 {all... yes, we're *all addicted. even lil' hailey}, hunger games {yours truly... gotta finish the book tomorrow!!! ...hosting book club this thursday... & still scrambling to FINISH... no idea what i'm serving........}, and of course- valentines for hailey.

i knew heading into to february that it would be non-stop from beginning to end... from the superbowl party, all the way to jacob's birthday (with a million things in between).  we're halfway through... and movin' right along.  doing the best we can to to keep our sanity intact, while longing for the {calmer} month of march.  taking it one day at a time

Renewal.

                         
                         
We've made it through the dreaded week.  Mammogram's DONE, results IN (all good!), annnnnd......... "re-wiring hell" is OVER.  Thanks to my husband, our music will soon be all in one 'all-access' spot, and we can now stream our way through Downton Abbey...
 
So, in the midst of uploading cd's, downloading songs, stringing hearts, & bakin' beans, this (see above image) is pretty much how the 1st 1/2 of our weekend will be spent.

{except it most likely won't be iced coffee in my cup :)}

Tread carefully.

   

Somewhere in between my crazy past life & the present- still crazy, but a different-kind-of-crazy life, I went through sort of a "hermit" phase.  I didn't want to be tied to anything... to the computer, to my phone, to staying on top of trends... movies... pta calendars...  I rarely (pretty much never) checked email, barely answered my own phone- and texting??  Forget about it.  Just wanted to watch my few favorite shows, immerse myself in the kitchen, & spend time with the ones I love.  Didn't have a need to get the latest n' greatest device... social networking was far from the scope of my daily to-do lists.  I mean really far.

Well, I'll be honest.  I kinda liked it.  Just me & my little family... my dinosaur computer... & my hot pink RAZR.  

But it wasn't until I started blogging (or actually- reading other blogs) that I fully grasped just how BEHIND I had gotten since I'd parted ways with my 'work laptop'... my treo... my real-life-social-network.  As I've shared here- in a way- I'm not in any hurry, and have no plan to be ahead of each & every [or any] curve.  Yet, at the same time, we've been playing the game of catch-up {pretty heavily}.

Catching up on movies, music, books, people, phones, gadgets, beauty products, you-name-it.  This weekend, our [Ryan's] mission was rewiring- reconfiguring- streaming... I won't bore you with details, but I will say- IT'S A MADDENING PROCESS.  Will I be ever-so-happy to fiiiiiiiiinally watch Downton Abbey- OH, I mean to STREAM Downtown Abbey from our television... to access our music on one central nework???  Of course I will.  But part of me really, really misses those dinosaur-computer-pink-razr-days... the days in which I believed a "BLOGGER" was some scary movie character (not really, but you get the point)...

Maybe it's the fact that I decided to watch a couple of thought-provoking, intense, George Clooney films- two nights in a row... maybe it's the re-wiring hell... the impending mammogram... the billion things on our calendar in the approaching month... the new workout time of 5:30AM... but things are feelin' a little "heavy" around here at the moment.  Maybe I'll stick with wine coolers Family Ties for the next couple a' nights.  Just to stay balanced.
