Relax.

I had planned on posting a few pictures... Christmas-tree shopping, mulled cider mulling...

I planned to do this last Sunday for Monday's post.

Didn't happen.

But decorating did happen- prior to '10:00pm'! (we intend to start everything early, but we tend to run behind)... drama-free! {SUCCESS!!}

Planned again to do it last night. A few more pictures to add to the mix... light-hanging, letter-writing (yep... those santa letters still happen!)...

Didn't happen.

But shopping did happen... and not only did it happen- it doesn't have to happen any longer, cause it's DONE. Hours and hours and days and HOURS later, but it. is. done. And wrapping did happen... prior to the usual hell that is us buried in unwrapped presents at the very, very last minute (Christmas eve)... cursing our way through... all the while trying to make them look festive... unique... creative... cute...

And this movie happened too.

And arguments were forgotten...  undone tasks forgiven...

Unshared pictures filed.

Next year.

as i check in on instagram, and the other social media 'sources of inspiration' time-suckers sites, i continue to add to my 'next-year' list.  the 'next year' list that is 1/2 full of items/pictures/projects from last year that were supposed to be implemented this year.

well, the tree is up, shining bright.  the other decorations are well on their way.  new outdoor lights {'old-fashioned' ones... a 'to-do-this-year' task that was actually done} have been purchased... leon has arrived, and is monitoring as close as ever.  *homemade card supplies were ordered weeks ago...

...but still untouched.  advent calendars just put out yesterday... on the 6th of december. not the creative-thoughtful-diy kind either.  the cheap-easy-low-grade-chocolate-filled-paper-box kind.

looks like those pine cones may have to wait one more year before their trims are painted white as snow.  and those christmas card supplies might just be perfect for next year's holiday cards.

ryan's in his last wave of classes, life is chaotic, our lists are never even closed to being checked off..... and 'in the big scheme of things' it's alright.  and it IS temporary (a necessary- daily- reminder).

but speaking of next year...

i saw a gorgeous olive wreath the other day that i'd love to try my hand at creating my own version...

and also, a magnolia leaf one...

both trees in which we have.  both very simple and seemingly doable.

next year.  for sure.

Get up & go.

in some areas, routine is back in full gear.  lunches prepped.  grocery list managed.  homework... my kids are killllling it  {total parental bragging, but it's the honest truth}... appointments attended, teeth well-cared for, bedtimes [somewhat] adhered to (for the first time ever)... so yes, some areas run like a well-oiled machine.

and others... not so much.

specifically~ 'the morning ritual' (or lack thereof).

let's just say- i am not one of the "put-together" moms in the carpool line.  and really, it has nothing to do with looking hot at 7am*... but the total lack of getting-myself-together as of late- the lack of the morning ritual (be it working out, reading a book... reading a blog... putting lipstick on...) leaves me running for the rest of the day........... and not in a cutesie "jogging-through-the-city" kinda way.......... running to catch UP.

without intention.  without design.  without a plan.  and not surprisingly~ time always seems to run out before i get to the good stuff... the stuff that never seems to pass through the gate of intention- and onto the bliss of reality.

combine the above with major over-analysis/procrastination tendencies... not a good mix for living the live that i want [intend] to live.

so, as of late, i'm constantly drawn to images of doing... creating... going...

as much as i love a lot bit of reflection... i need to carve out some time at the start of my day- and whichever way i decide to spend it- toss the covers and anxieties aside, to get up, and GO.

{*but i'm sure it couldn't hurt}

Season of change.

We may not be able to control the forecast, but we most definitely control the menu.  When you combine summer's end with autumn's arrival~ magical moments are created in your very own kitchen.  Moments that entail late summer plum pudding cakes, and slow roasted tomatoes... banana fig bread and roasted red bell pepper pesto... savory pumpkin & goat cheese risotto stirred with a crisp glass of rosé in hand, and enjoyed with a deep dark glass of red.

Fall may not have made it's way outdoors, but right here, right now, within our four walls, it is happening.

Not only do we run the show when it comes to our daily menu, but we are also in full command of our daily calenders.  Just another way to set the tone, rather than letting the temperature tone set us.  To celebrate the arrival of a new season, to initiate change where needed, and to {intentionally} keep some things just as they are.  As much as I am ready to welcome the season of slouchy knits & black leggings... scented candles & cozy blankets... soups & stews & pies & warm beverages galore... there are a few elements that I am not quite ready to remove from the "schedule".

As I plot out the calendar, or take on a new day... a new week- I'm making a concerted effort to embrace the renewing, invigorating, warm & welcoming essence of autumn, while holding on to a bit of the youthful spirit that summer exudes.  Many more seasonal meals be made... favorite old & new traditions to enjoy {especially this one :)}.

{Please join me in continuing the conversation over at Pink Moon Daily, to discuss this quintessential 'holding-onto-summer-while-embracing-autumn' tradition, as well as this "transitional" month, a little further...}

...on the "art" of pinning {& not *doing}.

image via

Over the summer, I took a little break from "information-collecting" of any and all sorts- virtual pinning, magazine tearing/clipping/pinning, blog post 'bookmarking'...

Sure I was busy with the kids at home 24-7... vacations... Instagram... life away from the computer... But really- I was just tired of pinning images of "inspiration" up on those boards, without turning a single one into fruition.  Tired of clipping a craft idea that I had no intention or time to create- or bookmarking a recipe that I knew I couldn't eat (due to our temporary diet restrictions).  I couldn't possibly pin another item onto an already overly full board/plate/LIFE.

After our major spring purge, I realized that our cabinets & cupboards weren't the only areas that needed sorting, tossing, "refining."

Aside from summer's huge reward of spending more time with the kids, & road tripping our way to 'wine country'- it provided a time to take a much needed step away, to put an end to the madness of the piles and piles of magazines, the insane amount of emails [literally] flooding into my inbox each day...

To sort my way through the information, the inspiration, the aspiration- until I was left with almost nothing.  Which meant a lot of deleting.  A hell of a lot of unsubscribing.  A lot less sharing, committing, piling, stacking, saving, filing, PINNING...

But as of Thursday, I was ready.

Ready to dive in.  Into magazine reading... article clipping... meal-planning (I can't even begin to express how nice it has felt over the past few days to have a little order when it comes to our meals- to not stand aimlessly in my kitchen at 5:30- or later- each night and wonder WHAT IS FOR DINNER).  Into my long-lost love that is Pinterest.

It's funny how intrusive it can all become- all of the craft ideas, surefire cleaning techniques, the surefire parenting techniques, the "how-to" tutorials, the party-planning/picnic-throwing/meal-making ideas,- how overwhelming... how excessive...

Yet on the other hand, how incredibly stirring, useful, motivating, uplifting it can also be.

As long as there's a little doing action involved.

{When it comes to the 'food & recipe category,' I will say- there was plenty of doing going on this weekend.  Those [articles/pins/bookmarks] are usually the fastest to pile up after all.}

In the midst of summer.

Yesterday, I ventured out to the garden, and picked our very first golden yellow heirloom tomato.

I set it on the counter right next to the big ol' dark green watermelon... the first to appear in our csa box as of yet- & the first to be consumed since the summer of 2011.

Only a week left to our annual wine country vacation, and I'm over the moon excited about it.  I think more-so than I ever have been in these past five years.  This is the time of the summer where it all starts to feel a little rushed, a little too chaotic for my liking- right before our trip, right around Hailey's birthday... right when we realize that school resumes in only ONE MONTH.

Plus...

This year, Jacob's been in summer school (which we didn't want to have him do, but realized it was pretty necessary with the load he'll be taking next year, and will make the transition into high school(!!) a bit more smooth)... and today is his last day.  So, without being a total debbie-downer, I'll just say, it's been a little less 'summery' than usual around these parts this year.  Which has been a good thing in some ways- morning time with Hailey, a pretty nice routine (usually, during these lazy-crazy months, "routine" falls to the wayside in a bad way), and I have to say- far less bickering takes place when one is gone.

But I'm longing for day trips & car rides with both kids in tow... windows rolled down, music turned up... for picnics & game nights... peach cobbler & blackberry pie.  After the party, after school's officially out... come Monday mornin' ~ it's ON.

So that's why something as simple as a very first golden yellow heirloom tomato, and a big ol' dark green watermelon made me one very happy gal.

And of course, I got straight to work at putting one of the two to good use {the other to follow suit this afternoon}.

...an heirloom tomato panzanella {by a 'napa valley chef'... gettin' in the wine-county moooood I tell ya :-)}.

Garlic-y crisped oil-glistened bread, aromatic basil, in-season tomatoes.  To say "it worked" is an understatement.

[*cook's notes:  used gluten-free brown rice bread, added cannellini beans, omitted the butter & cheese... still a 5-star recipe, substitutions & all...]

Wishing you lots of sunshine this weekend... on the inside & out.

A check-in, a recap, & a slight addendum.

well, i'm knee-deep in party-planning [CLEANING] mode for this little cutie's 'backyard-picnic' party.  her actual birthday was such a perfect 'hailey-day'... a mellow, but full day with just ryan, jacob, my mom and her husband...

it all started with a donut - not just any donut- the best donut, then onward and upward to farrell's and next, just a few doors down, to color me mine... a big ol' sundae, a quiet ceramic-painting session with her and jacob, in which we chatted and admired their heavy focus and artistic talent... topped off with the long-awaited-totally-giddy present opening, and of course- the remainder of summer strawberry cake.  yep.  a pretty happy birthday it was.

although the day is done, we still have a party to throw, one a little less quiet... one that will include a few more family members, a handful of friends... lots of little picnic baskets, of course- a slip n' slide and every other "pool"-related item we own (our feeble attempt to make them forget about the reality that there is in fact, no pool),
{i realize i'm going a little link-crazy here, but as of late- instagram seems to be the only 'account' that i can somewhat maintain :)}, & most definitely some type of summery strawberry treat to officially mark the occasion.

{speaking of 'summer strawberry treats' i decided to link the aforementioned strawberry cake up as last week's tried & true recipe.  i realized that it is the 4th time i've made it, the third time i've mentioned it, but have yet to write anything about it... and although it's super easy, there's one important point  for those of you who are interested in trying it out for yourself- which i highly recommend.  i updated the post with the following note...}

*not a recipe i'm trying for the first time, i'm still using it as this week's 'tried & true', because it is so incredibly good (and easy- & perfect for summer), and i wanted it to be officially represented on THE LIST.

a quick *cook's note... if you want the strawberries to stay on top, as opposed to sinking into the cake (making them invisible until sliced & consumed), then the barley flour that she recommends using along with the white flour is key.  last summer, i made this cake a few times- the first with white only, then the second with white only, but higher-stacked strawberries (thinking this might've been the issue)... sunken strawberries on both occasions.  i finally purchased barley flour and low & behold- those babies stayed *afloat*.

...which for me, was in fact key, since it just makes the cake so darn pretty :).

{i'm assuming another dense flour would also work, but i've yet to try}

il dolce far niente.

{the sweetness of doing nothing.}

while the boys were off bein' over-achievers, and hiking that little mountain called "half dome" (actually, it was a huge achievement and i'm so very proud of them... more on that later), us girls stayed home, and pretty much did nothing.

for 4 days.

thought about dressing fancy and goin' out on a mother-daughter date... about taking on a major garden project, or baking up a storm... but i know my daughter.  i know what she needs.  not wants, needs

the other stuff will happen.  but for now, for this reason, nothing was everything.

now, let the party-planning begin for this soon-to-be 9 yr. old.
{{sigh}}

It's official.

survived

middle

school.

... with straight A's & flying colors i might add :-).

{& our marriage survived an ENTIRE saturday of garage-cleaning... one bedroom to go!!}

...3 school days left, one bedroom to devour, & lots of post-purge cleaning to be done.

They say...

It gets worse before it gets better.

{carving out a bit of dining space for breakfast this morning (jacob exclaimed, "i don't think that the 'organization' is working.")}

Seeing that we've been at it for 10 days... I'd say "they" are right.

I've agreed to volunteer for the entire day today AND tomorrow (why???)... and we've got Jacob's spring orchestra performance to attend tonight... a resume to help him create- a t-shirt to help him design (So. Done. With. Homework. Assignments.)... Friday's 8th grade graduation ceremony (yes, graduating the 8th grade is apparently a very big deal these days :)) to plan for...

In other words, there will be very little checking off of the to-do list today (or tomorrow- or the day after that), so looks like we won't be living in "organized harmony" quite yet.

But sooner or later before summer- even if it kills me- room by room... shelf by shelf... drawer by drawer... clutter will be conquered- once & for all.

Purging along {& bakin' ratatouille}.

since friday night, book shelves have been thinned, stacks {and stacks} of magazines (all of which i intended to read- cover to cover... none of which have been) recycled, garbage bags filled, barbies purged, walls scrubbed, drawers- bins- closets- keepsakes- organized, ...4 large truck loads to the good will later... and this is only the beginning.

ryan's almost finished listening to simplicity parenting, and man- all we can think is- how the hell did life get so OUT OF CONTROL in the past 2 years???  how did we (we, who pride ourselves on deshittifying) accumulate so. much. sh*t?

much more to come on this topic, but for now, onto lighter fare...

ratatouille.

it was last night's dinner, and- talk about simplicity.

now that summer's just around the corner {10 more days!?!}, i am declaring that it be added to the weekly rotation (also a key learning from the aforementioned book, but more on that later).

zucchini... squash... tomatoes... basil... bell peppers... a summer garden, captured all in one pot.

{and so hearty & flavorful, the kids don't even remember just how "healthy" it really is... & just how many dreaded bell peppers are mixed in.  we've been eating only vegetable-based dishes, and in an effort not to make two separate meals, we no longer omit them- or cut them super huge so they can pick them out... & tonight, for the first time- they both ate the entire meal- bell peppers & all!  guess they figured it wasn't worth all of the effort to dissect each bite.  proud parenting moment :).}

baked ratatouille
*adapted from the master your metabolism cookbook, by jillian michaels

serves 4

2 tbsp olive oil (I used grapeseed oil, & then drizzled a little olive oil on each dish just before serving)
1 medium chopped red onion
1 1/2 tbsp chopped garlic
1/4 tsp red pepper flakes (used only a tiny bit)
1 tbsp tomato paste
2 bell peppers (used one yellow, & one orange), cut into 1/2-inch cubes
1 (28-oz) can diced tomatoes, drained
2 medium zucchini, cut into 1/4 inch-thick half-moons
2 medium summer squash, cut into 1/4 inch-thick half-moons
2 (15-oz) cans beans- cannellini, chickpeas... (I used leftover pinto beans from a big pot I made on Monday night)
1 tbsp chopped fresh thyme leaves, or 1 tsp dried
20 basil leaves, torn in 1/2, plus a few extra for garnish (I had a lot to use up, so I used 30 leaves)
salt & pepper
2 tbsp grated parmesan, optional (I omitted this)

Preheat the oven to 400.  Have a 3-quart baking dish ready.

In a large skillet, heat olive oil over medium high heat.  Add the onion, garlic, and red pepper flakes and cook, stirring occasionally, until softened, about 3 minutes.  Stir in the tomato paste and cook for about 1 minute more.  Add the peppers and cook until softened, about 8 minutes.

Stir in the drained tomatoes, the zucchini, squash, beans, thyme, basil, salt, and pepper.  Bring to a boil, cover, and simmer for 5 minutes.

Pour the mixture into the baking dish.  Sprinkle with cheese, if using.  Bake until bubbling and lightly browned on top, about 30 minutes.

Garnish with a few fresh basil leaves & a lovely drizzle of olive oil.

good stuff, i tell ya.

Simplicity parenting.

You may recall a post I wrote a couple months ago in regards to re-grouping, re-connecting, and unplugging.  And we did, for a few days, until life resumed as "normal"...

Well, it's time to create a new normal- one that will last.  We're both reading Simplicity Parenting, and so far, it has been profound... thought-provoking, challenging, empowering- and yet presented in a clear, approachable manner.  It simultaneously brings to surface what we intrinsically know to believe is right (for us, individually, and as a family unit), and it introduces new insight, ideas, & simple {yet powerful} methods for facilitating change- for re-grouping, re-connecting, and getting back on track.

Many bloggers are reading (or have read), and equally benefiting from this book.  In today's fast-past, consumerist, high-tech world, we're all experiencing similar challenges when it comes to raising a family, and striving to "keep it simple" while struggling to fit it all in.  Alexis {@ Fern and Feather} is hosting a virtual book club discussion, and today, I'm over at her place- spilling the beans about our current state of affairs.  It's been one of the most powerful chapters in the book thus far.  I'd love it if you visited me there, and shared your thoughts- whether you've read the book or not.  To do so, click right HERE :).

the Essential vitamin.

...here's to some *major caffeine productivity in the coming week.

{image via}

Busy bees.

in an hour or so, I will wake hailey up, "throw" her into the shower (since her poor ol' mom was too exhausted to do so yesterday evening)... and transform her into amelia earhart for her first memorized presentation.  she's been working hard all week... the biography portion (a written report) was done on tuesday, then the speech was written on wednesday- and she's been practicing ever since.  last time i checked-- isn't she only in 3rd grade??

as i type, jacob is vigorously working on homework that he was just too tired to finish last night.  lots has been squeezed into this boy's schedule as of late.  a big KMO competition earlier this week, a full x-ray exam after school yesterday (dr. ordered due to slight imbalance of chest bone structure... fingers crossed that it's nothing)... a scout camping trip, this weekend, to prepare for.  he's the patrol leader, which means he's in charge of all communications, cash, and most importantly- food.  so, he and ryan scrolled the grocery store isles yesterday, calculator in hand.

all that to say, it's been a pretttttty busy week in the sessions' household, kids & parents alike.  and, it's not over yet.  not until the day is through... not until her speech is complete... not until we 'pack him up' & send him off to camp...

so last night, i decided we needed a nice hearty, soul-soothing dinner.  one that was meaty enough to satisfy my growing boy (can you believe we now wear the same. shoe. size???)... one that was packed with enough pasta to her pasta-loving heart's content... one that i could toss together in minutes- then let blip~blip~blip away during the chaos.

turkey bolognese

*from my father's daughter, by gwyneth paltrow

{I've had this book since it came out, but there are so many recipes i've been wanting to try- including this one.  The recipes are not "earth-shattering" (like jora said), but they are wholesome, and comforting, and a bit festive, even... and easy enough for a weeknight (but tasty enough for a weekend).}

serves 4 (with enough for leftovers... YES :))

5-6 tbsp extra virgin olive oil
3/4 lb italian turkey sausage links
1 lb ground turkey (ideal to use dark meat)... used lean ground beef
coarse salt & freshly ground black pepper
2 medium yellow onions, peeled and finely diced (about 2 cups)
3 cloves garlic, peeled and minced
2 28-oz cans whole peeled tomatoes with their juice
1/3 cup tomato paste
3/4 lb rigatoni... found [& used] whole what rigatoni!
grated parmesan cheese, for serving

Heat 2-3 tablespoons of the olive oil in a large heavy pan over medium0high heat.  Add the sausages and cook, turning them now and then, until browned all over, about 10 minutes.  Remove the sausages to a plate and add the ground turkey (or beef) to the pan along with a healthy pinch of salt and a few fresh grinds of pepper.  Cook, stirring here and there, for 10 minutes, or until nicely browned.  Remove to a separate plate.

Add another 2 or 3 tablespoons of olive oil to the pan and add the onion and garlic.  Cook until these are softened and just beginning to brown, another solid 10 minutes.  Add the tomatoes and their juice along with about 1/2 cup of water that you've swished in the cans to get all the tomato out of them.  Add ground meat, stir the sauce well, and nestle the sausages in.

Bring the sauce to a boil, season to taste with salt and pepper (I recommend waiting until later to season) and turn the heat to low.  Cover almost completely with a lid (let steam escape from one side) and gently simmer for 4 hours, adding splashes of water every hour or so if the sauce is at all drying out.  Uncover the sauce and stir in the tomato paste, barely cover, and simmer for 1 more hour.

When it's about ready for serving, bring a large pot of water to a rolling boil and salt generously.  Drop the rigatoni in and cook according to package directions.  Serve the sauce over the cooked rigatoni with a nice grating of Parmesan on top.  Perfect.

*COOK'S NOTES
  •  This was a great simple "base" bolognese recipe.  No carrots or celery (which worked, since I didn't have them on-hand)... No spices, fresh herbs, or wine- which also worked well for last night, since I was short on time, & the "less is more" approach was entirely necessary.
  • That said, as time permits, I'd definitely add any- or all- of the above if I happened to have it on hand.  In her ragu recipe (which I've made several times), she tosses a few sprigs of rosemary into the meat (along with red pepper flakes & crushed fennel)... divine. (*and she adds a cup of wine, which never hurts)
  • Speaking of the turkey ragu recipe, I've noticed (no clue as to why I'm just now noticing this) a weird taste in ground turkey (even when mixed with all of the deliciousness mentioned above).  For this recipe, I used turkey sausage, but instead of ground turkey, I used lean ground beef.

well, looks like "miss amelia" is up...

here's to a busy friday, and a wonderful, revitalizing weekend.

The big "F" word.

For the past 2 1/2 years, this is what at least half- if not more- of our weekend looks like {aka- homework}...

On weekends when I, also have a lot to do, it gets a bit challenging to incorporate "fun" into the mix.  The kids get up each morning and ask, "What are we going to DO today???"  In my mind, I reply- "NOTHING!!!" ... or "Where are we going to GO today???"  ..."NOWHERE!!!"  My intention is not literally to do nothing or go nowhere...  But to them- returning a shirt, painting my {very scary looking} nails, getting the car washed, organizing the garage, ...... is essentially Nothing and Nowhere.

But no matter how busy I am- or he is... I refuse to let the television, or the Wii serve as the entertainment director/babysitter.  Believe me- I don't see it as my sole responsibility to "entertain" them.  I'm all about letting them create their own fun.  There's plenty of Christmas/birthday gifts that have been merely touched and would surely keep them busy {& happy} for hours.  There's bikes & skateboards & scooters... & gorgeous "summer" weather to boot.  Not to mention, a very playful dog who is always up for company- & an intense game of fetch.

Of course their questions (or interrogations, rather) are partially in the hopes of squeezing an answer outta me- such as, "We're going to DISNEYLAND!!" or "I'm going to let you play ALL of the video games you want... and eat ALL of the candy you want!!"  But I also recognize that sometimes "fun" is not FUN if not shared with others...

And I am incredibly honored to be included in their weekend dreams.  Plus, I need a little fun in my life too, right?

So... I replied, WE'RE GOING TO BUILD A FORT!!!

And we did.

And it was sure FUN =).
...

*a must read article (via Mary), if you, too, are {or once were} into fort-makin'.

Power bars.

With my grandma here the past few days, it's been both extremely productive in some ways, and not so much in others.  Anything involving the computer has been close to zero (yes, I do like/need to be unplugged every now & again, but today- to make up for the extended absence- I'm granting myself lots of extra url time... before & after our tax appointment of course).  Working out has been pretty light this week.  Spring cleaning, laundry, organization- on the other hand... huge, huge progress.

On Monday, my mom, my grandma, & I were all set to spend a day of shopping.  That morning, I looked around at all of the to-do projects & piles, at the mound of laundry that didn't get done over the weekend, at the huge bag of "organization supplies" purchased a month ago at the Container Store, Ikea, Target... and I decided I did not/could not bring anything else into this house until I resolved the currant state of affairs.

So, instead of birthday shopping, my present came in the form of HELP... We spent the entire day getting things done.

I'm talkin' the "getting-on-your-hands-&-knees-&-dusting-under-the-bed type cleaning"... and I am incredibly, incredibly grateful for their gift.  Their gift of time, of assistance, of love... because it takes a LOT of love to dig through another's "dirt"... & boy, their love for me is to the moon {& back :)}.

So, maybe a bit off-balanced in all other areas- temporarily, but it's necessary to keep moving forward... to keep the 'wheels from getting stuck'.

But, all that pinning over the weekend was surely not in vein.  It was the determining factor in Sunday's dinner, & was the source of inspiration for these "power bars" that my grandma & I tossed together before her departure yesterday.  The 'food category' is also pretty off-kilter this week... a few [indulgent] meals in store- beginning with this evening- & continuing throughout the weekend.  Not to mention, anytime I take a "road trip", my appetite seems to increase tenfold the second I set foot in the car.  So, aside from the fact that these are excellent 'recovery snacks' (pre & post workout), this week- & this weekend- they are simply necessary.

power bars
*adapted from the little red house

makes a quarter sheet pan's worth of bars

{this is a very, very loose recipe, so adjust/adapt ingredients accordingly!}

1lb pitted dates or figs (*see note below)
1/2 tsp vanilla extract
pinch of cinnamon
cup of almonds, roughly chopped
a few handfuls of rolled oats & rolled wheat (didn't have rolled wheat- used wheat germ)
large handful of sunflower seeds
large handful of raw pumpkin seeds (I used salted/roasted seeds, since I had them on hand)
[either of the above 2 should be salted to add a salty/sweet flavor to the bars]
small handful of flax seeds
handful of dark chocolate chips

Puree the dates in a food processor until a paste starts to form (this is your "glue" to hold your bar together).  Add vanilla and cinnamon.  Continue to puree until it forms a "date-paste ball" inside of your machine.

Add the date-paste and all of the other ingredients into a large bowl and mix it together.  Add more seeds if the dates will hold more.

Press the mixture into a quarter sheet pan and place it in the freezer for an hour.  Turn over onto a cutting board and slice into squares.  Store in the freezer, if desired (for a longer shelf life), and thaw for a few minutes...

...when you're ready for a protein packed 'recovery snack'.

*COOK'S NOTES
  • My handfuls must have been a little too big, because the date-paste was not really holding all of the nuts/seeds together.  I had dried figs on hand, so I created a fig-paste and added it to the entire mixture.  Next time, my "large handfuls" will not be quite as large.
  • Next time, I'll line the bottom of the pan with parchment paper (with extra parchment extended over the sides) so I can easily pull the bars out before cutting.
  • My favorite store-bought 'power bar'... the label speaks for itself!

Happy Wednesday everyone... I'm sure I'll see ya in one social-media venue or another- later today... after the {hopefully FRUITFUL} Tax Appointment.
